Definition

Dunkelroter bis rotbrauner, synthetischer Azofarbstoff, der in Wasser gut löslich in Ethanol wenig löslich ist.

Allgemeine Information

Amaranth findet als Lebensmittelfarbe (E 123) Verwendung, so für für Aperitifweine, Spirituosen.  Es wird vermutet, dass Amaranth wie Azorubin pseudoallergische Haut (Urtikaria)- und Lungenreaktionen (Asthma bronchiale) auslösen kann. Dies wird jedoch auch bezweifelt. Tierexperimentell werden hämatologische Effekte unter Amaranth-Gabe beobachtet.
